Classic Tiramisu

Ingredients (for 2/3 portions)

  • Mascarpone 200g
  • Egg Whites 2 (pasteurized)
  • Egg Yolks 2 (pasteurized)
  • Sugar 60g
  • Ladyfingers 8
  • Espresso 1/2 cup + 1/4 cup of water
  • Cocoa Powder as needed

Procedure

  1. To begin, let's make a nice strong espresso and when ready leave it to cool at room temperature inside a bowl. We will use the espresso to dip our ladyfingers. If you like, you can also prepare this recipe with regular drip coffee, but the flavor will be completely different.
  2. Start by adding half of the sugar and the egg yolks to a mixing bowl and whisk on high speed for about 5 minutes, or until the mixture has quadrupled in volume.
  3. Keep the mixture on the side and whisk the egg whites on low speed, making sure our whisks are super clean and dry. After about 1 minute, slowly incorporate the remaining sugar, and when fully incorporated whisk on high speed until our egg whites turn lucid and smooth, making sure we have no liquid at the bottom of the bowl.
  4. Let's grab our mascarpone now and whisk it with the egg yolks until completely combined.
  5. With a spatula, following a circular movement and moving from the bottom up, let's gently incorporate the egg whites into the egg yolks and mascarpone mixture. Let's make sure to be as delicate as possible. Now that our mascarpone cream is ready, it's time to prepare the tiramisu!
  6. Start by adding a little bit of cream to the bottom of the jar or glass. Gently fully dip the ladyfinger in the espresso for 2 full seconds, remove and drain the excess liquid, and place it in the jar. Cover with one layer of cream and repeat another time. Before we serve the tiramisu, add a sprinkle of cocoa powder on top and enjoy!
