  Professional Class   With a rapidly expanding curriculum, the FCA offers classes in the Neapolitan, Romana, Al Taglio, Traditional, Dolci, and wheat free styles of pizzamaking. Our experienced chefs will break down the technical science behind the equipment, recipes, and product management to help maximize any pizzerias potential.

  Consumer Class   Geared toward both the experienced home chef and the kitchen newcomer, our consumer classes offer a fun traditional experience cumulating in a family style meal to finish the class. Our chefs will work through simple recipes that will provide easy-to replicate results for perfect pizzas in a home oven.

Napoletana Pizza Course

Naples, the birthplace of Pizza and the undisputed home of the BEST pizza on earth.  Originally created to honour The Queen Margherita of Savoy, pizza has been at the soul of all thing Naples.  Our pizza masters will guide all students through our interactive course, providing an in-depth focus of the science, technique and essence of pizza Napoletana. 

Following an extensive look into the theoretical science of pizza, students can anticipate a full hands-on experience of mixing, kneading, constructing and baking the pizza in both electric and gas ovens.

Tradizionale Pizza Course

The shareable, round pie, a Tradizionale pizza favourite shared amongst all around the world. Lead by our master pizza makers, this theoretical and hands-on course will provide all students with a thorough look into the science, creation and beauty of the traditional pizza pie. 

Learn about dough, kneading and baking the pizza in both an electric and gas ovens.

Al Taglio Pizza Course

Roman Style Pizza, best known throughout Italy as “pizza al taglio” is a distant cousin to Naples. This Roman type of “street food” is baked in rectangular pans and decorated with the most fruitful selection of ingredients.  Leading the Roman Pizza journey, our most knowledgeable pizzaiolo’s will teach you the theory behind this airy, yet crispy dough.  Students will then have the chance to master the mixing, kneading and making of the pizza, utilizing different ingredient assortments to make their ideal pizza.

Course Length: 5 hours – CERTIFICATE PROGRAM


Pizzaiolo Training Equipment

The FCA offers access state of the art equipment suitable for the casual home consumer right up to the busiest pizzerias. With access to vast catalogue of traditional domed ovens, refractory brick or convection, as well as all of the latest dough making and pizzaioli gadgets, our instructors will pass on the knowledge required to maximize the full potential of your equipment.

Location

You are invited to visit the largest showroom for coffee equipment in North America, located in the heart of downtown Toronto at the corner of Dupont and Christie.

Our showroom is 20,000 square feet and housed in the historic Ford manufacturing plant.

We’ve filled it with top of the line barista, pizza, pasta, bakery and gelato equipment + accessories.
