Our Fresh Pasta classes aren’t just about making great pasta, it’s sharing the enjoyment of making fresh dough, rolling out the pasta and savoring the taste of every last bite! Take a journey with the FCA and our love for authentic Italian ingredients.  Throughout this course you will learn the science behind the perfect pasta dough, the techniques and gain the inspiration of creating your perfect plate of pasta!

Formats include traditional long pasta, authentic short pasta, and filled/stuffed pasta. Our experienced Chefs will break down the technical science behind the equipment, recipes, and product management to help maximize any restaurant’s pasta program.

Short Pasta Course

Style of pasta includes penne, rigatoni, trofie, cavatelli, macaroni and other similar types of short round pasta. Courses will explore the different types of sauces, additions, and garnishes that are commonly paired with these types of pasta.

Stuffed Pasta Course

Style of pasta includes tortelini, ravioli, mezzaluna,  and other similar types of  pasta often filled with meat, cheese, or both. Courses will explore the different types of sauces, additions, and garnishes that are commonly paired with these types of pasta.

Long Pasta Course

Style of pasta includes spaghetti, bucatini, cappellini, linguini and other similar types of long, thin, flat or round pasta. Courses will explore the different types of sauces, additions, and garnishes that are commonly paired with these types of pasta.


Pizzaiolo Training Equipment

The FCA offers access state of the art equipment suitable for the casual home consumer right up to the busiest restaurants. With access to vast catalogue of traditional pasta makers, cookers, dough mixers, our instructors will pass on the knowledge required to maximize the full potential of your equipment.

 
 

 
 

Location

You are invited to visit the largest showroom for coffee equipment in North America, located in the heart of downtown Toronto at the corner of Dupont and Christie.

Our showroom is 20,000 square feet and housed in the historic Ford manufacturing plant.

We’ve filled it with top of the line barista, pizza, pasta, bakery and gelato equipment + accessories.
