ROMAN STYLE DANDELION

Roman Style Cicoria Recipe

Ingredients

  • Fresh Dandelion 1 bunch
  • Garlic cloves 2
  • Olive oil 2/3 cup
  • Chilli flakes a sprinkle
  • Sea Salt as needed

Procedure

  1. Bring a pot filled with roughly 2 inches of water to a boil, add a nice sprinkle of salt. Remove half inch from the rapini stems.
  2. Have ready a little ice bath to immerse the rapini once they’re blanched.
  3. Once water is boiling, add the rapini and boil for 3 minutes or until the stems start to soften.
  4. Remove the rapini from the pot with tongs, strain them, and add them to the ice bath to cool. Then strain and pat dry with a paper towel.
  5. In a pan, add 1/2 cup of Olive Oil, 2 crushed garlic cloves, and the chilli flakes, and sauté on medium heat until garlic starts to golden.
  6. Turn the heat on high and add the rapini and toss well for 1 minute. Once the stems are soft and the rapini absorbed all the olive oil, plate and eat.
